Ingredients:
1 Tbsp Olive Oil
1/4 Cup Water
1/4 Cup Lime Juice
1/4 Cup White Vinegar
1 Cup Chopped Carrots
1/2 Cup Chopped Onion
1 Lrg. Tomato, chopped
4 Cloved Minced Garlic
5 - 8 Habanero Peppers
Directions:
- Heat the olive oil in a saucepan over medium-high heat. Stir in the onions and let them sweat, then add carrots and garlic, and stir until softened--approximately 5 minutes. Remove from heat and transfer this mixture to a blender. Add the whole Habaneros, lime juice, water, vinegar and chopped tomato. Blend until smooth, and add a pinch or two of salt to taste.
- Pour this mix back into the saucepan and simmer for about 5 minutes to thin out the sauce.
- Remove heat, let cool, and bottle
