Saturday Brunch: Banana Pancakes



We start off most Saturdays with "Special Breakfast". My partner is partial to
pancakes, so most weekends that's what we have. This is an awesome recipe for pancakes that I nabbed from allrecipes.com--it now lives permanently in my recipe box.

FYI: we are't partial to thick , fluffy pancakes, so I always pour in an additional 1/2 cup of water to thin out the batter. 

These are easy, delicious, and ready in 15 minutes. Here's what you need:

2 Overripe Bananas, mashed
1 Cup flour
1Tbsp sugar
1Tsp cinnamon
2 Tsp Baking Powder
1/4 Tsp Salt
1 Egg
1 Cup Milk
2Tbsp Vegetable oil

Combine your dry ingredients in a bowl and let sit. Combine all of your wet ingredients in a separate bowl and stir until  the mixture is uniform. Add this mixture to your dry ingredients--with a half cup of water if desired. Stir well then heat your skillet, pan, or griddle over a medium-high flame. Add oil or cooking spray to coat the bottom of the pan then make your pancakes. Use about  a quarter cup of batter for each pancake.

Cook until the cake is golden brown on each side then serve with butter, syrup and a sprinkle of cinnamon.
