Habanero Hot Sauce

I just wanted to share this fantastic little hot sauce recipe. We're in full harvesting mode, and will be for the next several weeks. These little beauties came from my moms garden in Baltimore County, and she promises to share other peppers as they ripen. This recipe yields about 3 cups of sauce.

Ingredients:
1 Tbsp Olive Oil
1/4 Cup Water
1/4 Cup Lime Juice
1/4 Cup White Vinegar
1 Cup Chopped Carrots
1/2 Cup Chopped Onion
1 Lrg. Tomato, chopped
4 Cloved Minced Garlic
5 - 8 Habanero Peppers

Directions:

  1. Heat the olive oil in a saucepan over medium-high heat. Stir in the onions and let them sweat, then add carrots and garlic, and stir until softened--approximately 5 minutes. Remove from heat and transfer this mixture to a blender. Add the whole Habaneros, lime juice, water, vinegar and chopped tomato. Blend until smooth, and add a pinch or two of salt to taste.
  2. Pour this mix back into the saucepan and simmer for about 5 minutes to thin out the sauce. 
  3. Remove heat, let cool, and bottle
